Weekend Recap: Waffle Fail and Not Quite Date Night

Once again, I’m a little late in posting my weekend shenanigans.  Better late than never, right??  I need to get better at transferring the pictures from the phone to the blog.  I always plan out the post in my head, but never have time to follow through the way I want to.

So this past weeekend was supposed to be a productive weekend.  We didn’t have anything planned, but I did have a few very important things on my To Do List.  (Taxes being one of them!!)

But as always happens, if there are things I don’t want to do, I will find a way to put them off.  On Saturday morning, I thought waffles were a great way to procrastinate….  These are Protein Oat Waffles.

Don’t get excited and ask me for a recipe.  Even though they look pretty, it was a HUGE waffle fail!!  I found a recipe for pancakes made with oats.  You were supposed to put the oats in a food processor to make them into a fine flour.  I skipped that part thinking it wouldn’t matter.  Oh, it mattered!!  That step was in there for a reason.

I, of course, still ate mine after I smothered peanut butter all over it.  But the hubs and the kids weren’t too crazy about the consistency.  Oh well.  Back to the waffle drawing board.

For lunch, I made a hard boiled egg wrap in a Flat Out.

Eventually I ended up taking care of my chores.  And to celebrate, Hubby and I went out for a date night.  Well, a ‘Not Quite Date Night’.  We ventured down the street to a neat little place called Double Dogs.

We had to take one kid with us.  The other kid was spending the night at my Mom’s house.  She prefers to keep them one at a time.

And a date night with a little person is not quite a date night.

And it meant we had to share our fried pickles with her.

And then we had to deal with her fits.  She is definitely a two-year old!

But my California Buffalo Burger was delicious.  Here’s the description:  A low-fat Buffalo burger patty topped with fresh spinach, tomatoes, red onion, Dijon mustard, our signature lime sour cream and Provolone cheese.

And I shared my fries with the little one.

On Sunday I was able to get the taxes prepared, filed and put away!!  Yay.  That’s always a chore I hate doing.  Even if we do get a little money back, I still wait til the last minute to do it because I hate the process so much!!

That was what was Marvelous in my Monday ….  even though now it’s actually Thursday.  Oops.

Weekend Recap: Music and Rest

First of all, I want to say thank you to everyone who posted with their own homemade remedies on Friday!  I’m not sure what worked, but I am feeling better now.  I had planned on taking it easy all weekend.  But then I found out that a band I really like was playing a free concert in Market Square!!  I couldn’t pass it up.  These guys aren’t in Knoxville very often and I didn’t want to miss it.

We were first introduced to The Delta Saints in February when they opened for our beloved Dirty Guv’nahs.  They were really good, so we downloaded a few tracks and started following them.

My favorite song is the brand new one, Liar.  The album hasn’t even been released yet.  But you can get a FREE download from their website HERE.

Other really good songs are: Swamp Groove and Momma and Bird Called Angola.  Check out their You Tube channel – they can jam!!

We love to listen to LIVE music.  As you might recall, we saw The Dirty Guv’nahs in Market Square not too long ago.

There were still 2 more bands to play after them, so we headed over to Blue Coast Burrito for some grub.  We sat outsite while we listened to the second band.  It was freezing!!  Good thing I had beer and hot salsa to keep me warm!!

We ordered the fish tacos, but I didn’t take a picture of them.  They were super disappointing.  Kinda soggy and wrapped in not one, but two corn tortillas.  I think Marlin & Rays still has the best fish tacos around!!

That was Saturday.  Despite my fatigue, I am soooo glad we went!!

I didn’t do too much on Sunday, I tried to take it easy and rest up for a busy work week ahead.  Although, I did manage to get a brisk walk through the neighborhood in.  It was super cold.  Okay, it was like 55 degrees.  But for this summer girl, I’m never ready for the first cold snap.  55 felt like winter!  Brrrrr.

Busy, but Fun Weekend!

My husband and I try to go on a date night at least once a month.  Sometimes it’s hard to get away and other times everything just falls into place.  This was one of those weekends where it simply fell into place.  Not just one, but TWO date nights in the same weekend!!

On Friday night, we went to see a free concert downtown.  Not just any free concert – it just so happened to be one of our favorite bands!  The Dirty Guv’nahs!  It was actually a CD release party for their 3rd album, Somewhere Beneath these Southern Skies.

Never heard of them?  I’m not surprised.  They are a local band, but they are growing in popularity all over the country.  Please check them out.  I believe they will be huge one day!!

Before the Dirty Guvs went on at 8pm, there were 2 opening bands – Black Cadillacs and Moon Taxi.

One of my favorite songs from their new album is:  3000 Miles.  I also love Temptation, Don’t Give Up on Me, and This Is My Heart.  Actually, I love the whole CD.  You should download it.  🙂

Baby We Were Young is probably one of the more (locally) well-known songs.  The official music video is fun because it features a couple of the popular news anchors of a local TV station.

More good songs:  Blue Rose Stroll  and  Wide Awake  and We’ll Be The Light.  One of my very favorites from the second album is It’s Dangerous.  (And I was actually in the bathroom when they played it.  Dang it.)

We had so much fun at the concert.  I was worried because the forecast called for rain all day, but the rain held off til the very last song when it just sprinkled for a few minutes.

Then, on Saturday night, I scored some (free) tickets to the annual Feast with the Beasts event at the Knoxville Zoo.  It’s an adults-only party where food and drink vendors line the paths at the zoo.  The ticket gets you all the food and alcoholic drink you want… or until the vendors run out of food, which some of the good ones did.

This picture shows me eating a salad from Panera.  From the most part, I was pretty good all evening.  I easily passed up the chips and queso from Moe’s, I passed up the donuts from Krispy Kreme, and I even passed up the pizza from Papa Murphy’s (which is a little shocking because I do love pizza so much).  Our very favorite booth was giving out barbecued salmon.  Oh. My. Word.  It was melt-in-your-mouth delicious.  It was a tiny little piece, though.  So we had to go back for seconds, thirds, fifths, eighths… I don’t know how many we had, but it was a lot.

The red pandas are definitely my favorite animal at the zoo.  Just look at that fuzzy little face.  SO cute.  I just want to take him home with me!

Just to give you an idea of how crowded it was.  It was packed.  You had to stand in line for most any booth.  The good ones, at least.

I kept wondering, though, why belly dancers don’t have nice bellies.  Oops.  Was that rude?  I apologize.  But if you are using all those ab muscles to shake your hips….

Anyway.

Another note: I apologize for the picture quality.  All pictures in this post were taken with my phone (Samsung Mesmerize), so they are not that great.  I just didn’t want to have to carry my DSLR around with me all night, especially when I knew my hands would be full of plates and cups.

If that sounds like a full weekend, it was.  But it’s not over yet.  Sunday was not a rest day for us.  We had friends coming over (with their kids) at 4:30.  So as soon as we woke up on Sunday, we had to get the house cleaned and ready for company.  I had to hit the grocery store, as there was nothing left in our fridge.  I stocked up on TONS of fresh veggies and lean meats.  So we’ll be eating well this week.  And I hope to have a fun recipe or two for you.  I’ve been pondering a few things I want to try.  I hope it works out.
