What I Ate Wednesday: 2/20/13

Happy Hump Day everyone!!  Who is ready for a little sunshine and warm weather??  I know I am!!  It was just a ‘blah’ day outside today.  And it was much colder than expected.

This morning, we were in a bit of a hurry to get out the door.  So that meant we didn’t have time for our usual kale shakes.  😦

Instead, there was leftover scrambled eggs with spinach in the fridge.  So I heated it up, placed it atop some fresh spinach; dabbed some red pepper jelly on a Trader Joe’s British muffin, and called it breakfast.  Not too bad.

Lunch was at my desk:  almonds, yogurt and a hard-boiled egg.

Yes, you read that correctly ….  coffee flavored almonds  !!!!  But wait.

I really had high hopes for them.  I mean, I love coffee. And I love almonds.  I especially love Blue Diamond!  So how could you go wrong?!?  But sadly, I was disappointed.

Read it again.  It’s roasted coffee.  Maybe that was the problem.  I’m not sure.  I think I’ll stick with the other Blue Diamond flavors I love so much (like wasabi, habanero BBQ, honey dijon, lime & chili, etc etc)

By the time I got home, I was exhausted.  Could not stop yawning.

I declared a no-cook night.  Thankfully there was a Newman’s Own pizza in the freezer for the kids.  (I tried a bite of Luke’s and it was pretty good)!

And I made myself a big salad.  With sriracha, of course!!  No dinner is complete without sriracha!  🙂

And finally, I will leave you with a funny story ……

I will occasionally leave notes in my son’s lunchbox or hubby’s lunch bag.  I just like the surprise of finding a little love note later.  So yesterday morning, I was sitting at my desk and I needed something from my purse.  I reached in, only to discover that Luke had left me a love note!!

How sweet, I thought.  Then I read the note …..  I couldn’t stop laughing all day …….

“I hope you get the orange off” ….  he’s referring to the fact that my hands are a little orange after my spray tan.  I had gone after the kids were in bed.  So he didn’t even know I had gotten a spray tan.  The next morning I was fixing his breakfast when he noticed my hands.  Honestly, they aren’t THAT bad.  But I will say – it was my first ever spray tan.  Now I know to put a little more of the barrier cream on the hands and feet next time.  That is, if I go again.  I mean,  I like the look of the tan, but I did not like the experience.  The claustrophobic little capsule and the spraying in the face – it’s enough to traumatize a person.  Ok, maybe I’m being a little dramatic.  All I could think about before walking in was that episode of ‘Friends’ where Ross forgets to turn.  Thankfully, I turned.  🙂

What I Ate Wednesday – 1/23/13

It’s Wednesday again.  Do you know what that means???  You get to see what I ate today!!!  🙂

I have to admit, after all the stress I’ve been under this past week, I haven’t been eating very much.For breakfast, I made an omelette.  But I didn’t eat it.  😦   It looks so yummy, but I just didn’t have the appetite for it.

For a late morning snack, I ate a Granny Smith apple and took some vitamins.

(I’m loving that new C Spray that came in my Bulu Box).  And I just bought that Ginkgo yesterday and plan to start taking it every day.  I’m hoping it helps sharpen my brain and my memorizing abilities.  (You know, since those babies sucked all my brain cells dry and I’m going to need them for studying)!

For lunch, it was yogurt.  I just LOVE these new Kroger Greek Lites.  It only comes in a few flavors, though.  But at only 90 calories, 16 grams of protein and only 6 grams of sugar, it’s my new favorite snack.  Not too many places where you can find that much protein for so few calories.

Just ignore the fact that the expiration date was a week ago.  That’s the “sell by” date, not the “eat by” date, right??  Well, it still tasted good and I haven’t keeled over yet so I think we’re all good.  🙂

So when I got home, we snacked on chips and salsa.

That salsa is very smoky and spicy.  My 2-year old stood there and dipped about 100 chips in the salsa.  At one point her eyes were even watering but she still kept dipping.  Definitely my kid!  🙂

And I wish I’d taken a video of her doing burpees.  Yes, my 2-year old did burpees with me tonight.  It’s so cold outside and I wasn’t in the mood for any workout where I had to think at all.  So I just decided to do 100 burpees.  I didn’t time myself, but I wish I had.  I stopped and rested at a few intervals, though if the clock had been ticking, I might not have.  Maybe I’ll try it again in a few days with a timer.  I’ll post the results.

Anyway, dinner was easy.  I simply heated up leftovers.  Last night I made the pizza meat loaf again.  It’s sooooo yummy.

As a side note, my phone’s camera has started taking some HORRIBLE photos.  Most of them were a green hue til I had to turn the flash off.  But the color still isn’t right.  I think it’s time for a new phone.  😦

After a couple old episodes of The Big Bang Theory with hubby on the couch, I needed a late night snack.

Oooohhhhh  yeaaaaaaahhhhhhh …..  CRUNCHY Cookie Butter!  I saw it at the TJ’s and couldn’t resist trying the crunchy version.

I still prefer the Biscoff spread over the Cookie Butter if given a choice, but I still love the cookie butter.  YUM.

So that concludes my eats for the day.

What I Ate Wednesday: 1/16/13

Happy Wednesday, y’all.

(Of course, by the time I’m actually posting this, it’s already Thursday.  So who am I kidding?  I should just go ahead and say Happy Thursday).

Today’s breakfast is a little unusual (for me).  I normally have a protein shake.  But this morning, we had leftover Crustless Quiche from the previous night’s dinner.  There was one piece left and it was all mine.

Spinach, feta, yellow peppers, and eggs.  No crust.  Sooooooo good.  The entire family devoured it.  I will make it again very soon and when I do, I will post the recipe!

For lunch, I was out with a client at Aubrey’s.

I didn’t want to whip out my camera in the middle of my working lunch, so you’re just going to have to imagine what the Cranberry Chicken Salad would look like.  (It was both beautiful and delicious)!

Here’s the description from the menu:

CRANBERRY CHICKEN Grilled chicken, dried cranberries, candied pecans, feta cheese, Red Delicious apple, fresh greens. 11

With balsamic vinaigrette on the side.  So yummy!!!

Healthy Living Kitchen

When I got back from lunch, the UT Medical Center’s Healthy Living Kitchen was doing a cooking demonstration at work!  They were talking about heart health, cholesterol and sodium.  Then he showed us some pretty mean knife skills.  How to chop a pepper so that you don’t waste any of it (very good to know)!  And then he made this Quinoa.

So we all got to try their Quinoa Stir Fry.  Yummy.  (Though, I personally thought it needed a lot more heat.  Like maybe some sriracha sauce on top!!)

After work, I still had to go to the grocery store.  It wasn’t a dire situation … yet.  But it was close.  I had a hard time packing the 7-year old’s lunch yesterday morning.  We were out of a few essentials, so I had to improvise.  He got a hard-boiled egg in his lunch!  (Which is totally fine with him – he loves them.  It’s just not normally something most people would put in a 2nd grader’s lunchbox).

So since I got home from the grocery store around 7pm and still had to figure out dinner, I made it as easy as possible.  I love these little frozen meals by Birds Eye as a base.

Then I add in my own extra veggies and seasoning.  Last night it was extra broccoli and some of the OMG sauce from GGG Foods I was telling you about in my last post.  This gave it a little kick.

And then I added even more kick on my plate by topping it with the Sriracha sauce, of course!  🙂

I seriously love this stuff.  In fact, I had to buy more at the grocery store tonight because we had just run out.  I’m thinking about just carrying some with me in my purse so I always have it with me.  LOL  I’m kidding.  Sorta.  🙂

What I Ate Wednesday – 1/9/13

Anyone else love hump day???  I don’t know what it is about Wednesdays, but I’ve always liked them.  And even more so now that there’s ‘What I Ate Wednesdays’.

So this morning I awoke rather early.  4:30 to be exact.  I heard Lucy crying in the other room so I got up to check on her.  (She was fine – I just covered her back up and told her to go back to sleep).  As I got back in bed, I realized I was awake and it was going to take a little bit of doing to get me back to sleep.  Well, at this point my alarm would go off in an hour.  So do I lay here for 30 minutes trying to go back to sleep, and then possibly sleep the hardest and deepest I have all night for 30 minutes and then not want to get up when the alarm goes off??  Or do I go ahead and get up and get things done??

So I opted for the latter.  I got up.  And let me say — it is amazing what you can get accomplished between the hours of 4:30 – 7:30am.

First of all, I went down in the basement to do my Tina Reale Best Body Bootcamp workout.  When I got down there, I realized that all of the Christmas decorations and boxes didn’t make it past the bottom of the steps.  And as I turned the corner I saw why – my mess of wrapping paper, gift bags and tissue paper was still all over the floor.  (Yes I realize Christmas was like 2 weeks ago but it’s the basement people, we never go down there.  Out of sight, out of mind).

So first I had to clean up my wrapping mess, then I moved all the Christmas tubs around the corner.  Then I did the fun circuit workout.  Then I cleaned off the Desktop, which my hubby had been asking me to do for a while.  (I typically just drop photos and everything and save it to the desktop.  After a while, it gets really cluttered.)  I also made my son’s lunch, my lunch, and I made omelettes for breakfast!!

Oh, and I got ready for work too!!  I’d say that is a lot do in 3 hours time.  🙂

For lunch I had planned on running my usual 4.2 mile trail.  Unfortunately it rained all day.  😦  So I took my salad over to my Mom’s house where hubby is painting her bedroom.  I had lunch with hubby instead.

And finally, dinner was tacos.  Yum.  My son and I had just gotten back from the grocery store.  Tacos are quick and easy.  These were made with ground turkey instead of ground beef.  Once you mix in the taco seasoning, no one can tell!!  🙂

There may or may not have been a cookie or two that were consumed during the day that did not manage to get photographed.  But if I didn’t take a picture of it then it didn’t happen right???

What I Ate Wednesday – 12/5/12

Wow is it really Wednesday again so soon??  Which, as I’m sure you may have figured out already, is one of my favorite days.  Not only is it Hump Day, but it’s also What I Ate Wednesday Day.  So I have to give a quick shout out to Jenn at Peas and Crayons and say thanks for the fun linkup.

And I’m loving that new holiday banner!

Confession time:  I have a new favorite.  Move over Kale Protein Shakes, there’s a new breakfast in town.  Egg sandwiches.  And this is coming from a girl who never really cared for egg much the first 30 years of her life.  Now I love them.  Can’t get enough.  And if I ever did eat scrambled eggs before, you better not dare put anything in them.  Now I love omelettes.  Bring on the veggies!!  Crazy, huh?  It’s so strange how your tastes change.

So that’s an egg with spinach on a whole wheat English muffin (except Trader Joe’s calls it a British muffin – LOL).

But, the piece de resistance (said in my best French accent) is the Red Pepper Jelly.  Yes, I said Red Pepper Jelly.  (By who else, but Trader Joe’s, of course!!)  It was amazing!!!

Here’s my #ootd pic I posted on Instagram with the hash tag “all dressed up and no where to go”.  I didn’t have any meetings scheduled, just sat at my desk and worked all day.  Well, not the whole day – I went for a run at lunchtime!!  🙂

Yep – I ran on my lunch hour!!  Go me!  I felt I had to take advantage of this gorgeous weather we’re having in December.

I’m getting pretty good at this running on my lunch hour thing!!  I can change clothes, get over to the park, run for 45 minutes, get changed again and back at my desk in just under 70 minutes.  I’d say that’s pretty good!

Let me first say that I bought this yogurt without even looking at the nutritional information.  I’ve never seen pumpkin-flavored yogurt before, and since it was Trader Joe’s brand, I knew I would love it.  So it’s way high in sugar content.  (But hey – I figured I just ran 4 miles, I kinda deserved it).  It’s also really high in protein (score!!).  And it was deeee-freaking-licious!!!  The only thing missing was a little granola crumbled on top.  Pumpkin flavored granola, at that!!

We have carrier reps sending us all kinds of crap during the holidays.  This time of year our counters are full of donuts and cookies and you name it, it’s probably there.  Rarely do they ever send the healthy baskets.  Anyway, there were these cute little caramel candies.  I couldn’t resist trying one.  (While you see there a picture of 4 caramels, I promise you – I only had one!  Which one do you think I tried first??  The espresso, of course!!)

For dinner, we originally made plans to go to a local place called the Stir Fry Cafe.  I have one of those Groupon deals I bought where you pay $10 for $20 worth of food.  (Love Groupon)!  Anyway, once we pulled out the printed certificate we realized that there is a restriction – you can’t use the deal on Wednesday nights for Half Price Sushi night.  Bummer.  Well, I already had it in my head that I wanted sushi.  So, by darn I was getting sushi.  Even if I had to pay full price for the half price sushi.  lol

I have to apologize … these pictures are horrible.  It’s really dark in the restaurant and the camera on my phone has been acting up lately and not wanting to focus.

I started with an appetizer of 3 Thai spring rolls. The kids loved them!

Here’s a funny story – as soon as we got home from school, my 7-year old ran upstairs to put his jammies on without me realizing.  When he came back down, I told him he needed to change back into his school clothes because we were going out to dinner.  He gives me this big huff and asks “Why?”  My response was “just because”.  (Mostly the answer was because the fridge was bare and the only other option was to go to the grocery store, which I didn’t want to do because I didn’t have my list or my coupons ready – but I didn’t tell him all this).  He asked me who we were meeting at the restaurant.  I said no one, it was just us.  He looks all puzzled and asks, “Then why are we going?”  I guess he didn’t think we could go just the 4 of us.  We rarely go out unless it’s a special occassion and we’re celebrating a birthday or something.  Kids are funny.

The hubs ordered fish tacos, of course.  I think we’ve tried them at almost every restaurant in town.  And Marlin and Rays still wins hands down!!

The White Diamond and Red Dragon rolls

There’s another local place called Nama, which to me is the standard by which all sushi should be judged.  Nama has the BEST sushi I have ever had.  While these rolls were good, they weren’t Nama-good.  And now that I’ve had mid-grade sushi a few times in the last couple of weeks, I think I’ll be making a trip to Nama soon so I can remember what the gold standard tastes like.  (Get the Soy Joy if you go)!!

Crustless Quiche with Kale

Tonight’s dinner was delicious.  And I basically just threw it together.  I found a recipe for Crustless Quiche on Pinterest.  (Yes, I am addicted, thank you very much).

But I didn’t have most of the ingredients it called for like frozen spinach and mushrooms.  (Yes, that would have been good).

But what I did have was kale and red pepper.  So, I improvised.  (I usually consider recipes to be more of a suggestion anyways.)

First, I sauteed about 2 cups of fresh kale with chopped red pepper, chopped onion and 2 cloves garlic.

In another bowl, I mixed up 5 whole eggs with 1 cup cow’s milk and 1/4 cup Parmesan cheese.  (Though, I’m sure egg whites, goat’s milk and feta would have worked just as well).

Then I mixed it all up in one bowl and added in a few spices:  sea salt, ground pepper, basil and oregano.

I poured it in a greased pie pan and baked @ 350 for 45 minutes.

Served with roasted red potatoes and a little red wine. 🙂

YUM!  Even my 7-year said it was delicious!!
