Weekend Update: No Green Beer for Me!

The weather was simply gorgeous this weekend with highs in the 70’s both Saturday and Sunday.  I couldn’t resist the opportunity for a long run.  We took the kids to my favorite park.  Hubby let them play on the playground while I ran.

I had to keep reminding myself that I am running a Half Marathon in 3 weeks!!!  So far, this run was my longest to date: 6.5 miles.  I guess I’m not too worried because I also did the same thing last year.  I focused on more anaerobic training rather than long runs and I got a PR!  So I figure now, if I can run 6.5, I can 13.1.  Right?

But I’ve got a small dilemma in the shoe department.  These Asics are fairly new (since Christmas).  I like them ok, but after about 4 miles, my feet start to hurt.  And they rubbed a huge blister on my toe.  So that’s not going to work for the marathon.  But I’m afraid if I buy a new pair now, I’m not going to have time to break them in before the race.  Or I could wear an old pair with a hole in the toe.  EEK – what would you do???

I was so excited to try out my brand new heart rate monitor!!  I ordered the Polar FT4 after seeing more than a couple of bloggers using this one.  I had a Timex brand, but the chest strap would never consistently pick up my heart rate.  So this was my first run using the Polar.  I’m converted.  This one is WAY better.  There was still a period of time (about a mile or so) where it didn’t detect my heart beat.  I readjusted the strap, wiped off the sweat, and a few minutes later it started working again.  I love how it displays the time and the calories burned at the end.  And it also keeps a training log so I can go back and look at my workouts.  Now that’s pretty cool!

When the run was over, hubby and the kids met me in the parking lot with Subway in hand.  We found a nice spot in the grass to lay our blanket and devour eat our sandwiches.  I was starving!!!

This month’s featured $5 footlong sub is the buffalo chicken!  One of my favorites.  Hubby and I always split a foot long.  The kids are hit or miss whether they will eat Subway or not.  Luke likes the bacon, egg & cheese on flatbread.

My 7-year old spent the night with a buddy, so hubby and I enjoyed a semi-quiet house on Saturday night.  He grilled us some salmon while I opened a bottle of wine.  Aaahhhh……  relaxing!

Sunday was a busy day.  So busy, in fact, I never took a single picture!  I am happy to report that I finished my Anatomy & Physiology class.  I got a 95!!  Yippeeee!

So that was my Marvelous weekend.  No green beer.  No St. Patty’s Day celebrations.  Nothing too wild.  Just food, fitness and fun.  (and a little studying)!  🙂

I’m hoping for more days just like that.  I need the warm air and the sun for my mental health!!  Winter is so depressing.

Friday Fun: Day Off

I took Friday off so hubby could go to a car show in Chattanooga.  It was already going to be a 3-day weekend with President’s Day on Monday.  But taking Friday gave me a 4-day weekend!!  Woo hoo!!

It was just me and the little girl all day.  It was fabulous.  Made me realize how much fun I would have if I could be a stay-at-home mom.  AND … how much I would get accomplished!

Not only did we have time to play, read books, work on our ABC’s and hang out together, but I also got 4 loads of laundry done, the fridge cleaned out,  the kitchen spotless and all the hardwoods swiffered.  I even had time to study while she was napping.  It was fabulous.  BEST. DAY. EVER!

I also realized how well I would eat if I were home all day.  I made myself a wonderful lunch while drinking more than my fair share of water!!  (Detox water, at that!  Recipe to come soon.)

I picked up big brother and we all enjoyed some leftovers for dinner.

I enjoyed a leftover fajita from the other night.  It was still yummy!!

After I put them down for bed, I caught up on 2 old episodes of Revenge (on Netflix).  I’m still on Season One.  I have 2 episodes left.  Then I have to figure out how to catch up on Season 2.  Man, that is such a good show.  I’m totally obsessed.   I just happened to find this review of Revenge that cracked me up.  I totally agree with that list of 7 things.

And as much as I enjoyed my time alone with the kids, I am so glad to have hubby back home.  All is right with the world.

Happy New Year!!

Hubby and I were lucky enough to get a date night on New Years Eve.  One of our favorite local bands, The Dirty Guv’nahs, was playing a concert in downtown Knoxville.  We scored the tickets months ago when they first went on sale.

And I was feeling pretty good after finishing my last working for 2012 …. a 4.2 mile run at Lakeshore Park.  I was so excited that they closed our offices early – at 2:30.  It meant I had time to get in a quick run.  It was only 37 degrees outside, but it didn’t feel that cold.  And I warmed up fast.

Hubby dropped the kids off at my Mom’s house while I was getting ready.  We had a hard time deciding what to do for dinner.  Too many good options – Downtown Grill and Brewery, Crown and Goose, Nama, etc.  But we decided on Sunspot for a few reasons:  one – the beers on tap, and two – hubby found a the description of a burger on their website.  It had egg, bacon, avocado, and more wonderful goodness on top.  It sounded like the perfect burger!

Unfortunately, that burger was LAST week’s special and therefore no longer available.  😦

So instead, hubby ordered the Steak Tacos and I got a Salmon BLT.  And LOTS of fries.  LOL  I haven’t had fries in a really long time … they were SOOOO yummy!!!!

Here’s a close up of the Salmon BLT.  It was uh-may-zing!!!  Oh my goodness.  I would go back tomorrow just to get another Salmon BLT.  Although, I’m pretty sure I can recreate this at home.  It’s just blackened salmon with bacon, lettuce and tomato.  The aioli sauce might take a little trial and error, but I think I’m up for the challenge.  🙂

This is the HISTORIC Tennessee Theatre.  It’s a gorgeous venue.  Recently renovated, too.

There were 2 opening acts.  The first was a singer/ songwriter Neal Carpenter, who is from Nashville.  I gathered that he knows the Guvs from University of Tennessee, which is where they all went.  I was impressed by Neil’s songs.  The lyrics were really good.

The second opener was a band called A Thousand Horses.  I’d never heard of them before, but they totally killed it.  They rocked the house.  While I wasn’t cazy about all the long beards I saw, I was super impressed by their stage presence.

Finally, around 10:30 the Guvs finally took the stage.

(Followed by a phone call from my Mom telling us that Lucy has a fever.  Great.  Good thing we packed the Tylenol just in case.  A fever is not an emergency.  I am not leaving a concert because of a FEVER.)

Back to the concert.  Our seats were in the center section, 6 rows back.   Pretty. Darn. Good.

The funny thing was … we could hear the people behind us talking.  The guy had never heard of the Guvs.  Really?!?  Why would you come to a special concert on New Years Eve to hear a band you don’t know play??  Furthermore, we purchased our tickets the first day they went on sale, months ago.  I imagine to get the seats behind us, they had to do the same.  So he’s had tickets for over 2 months now …  he couldn’t have looked them up in that time to see if he liked them before coming to a concert?!?  People are weird.

I kept waiting for the song ‘Brown Little Bird’ but they never played it.  😦   Instead, they played a few songs that weren’t theirs, like Creedence Clearwater Revival and Bruce Springsteen.  They were great covers, don’t get me wrong.  But here’s how I feel about going to a concert …  I paid money to come hear you sing YOUR songs, not other people’s songs.  Is that silly?  Am I the only one that feels that way?

To answer the question from the Daily Post about where I was at the stroke of midnight:

My phone died at some point so I had no idea what time it was.  They were in the middle of playing a song, stopped, and we counted down the 10 seconds to midnight.  There was no ball dropping, no fireworks (except for my kiss with hubby), it was mostly non-eventful as they went on playing their song afterwards.  But that was fine with me …  there was no where else I would rather be than with my hubby listening to the Dirty Guv’nahs play live!

They played til 12:30am.  It was an awesome show!!  My ears are still ringing!

What I Ate Wednesday – 11/15/12

As always, I want to give a shout out to Jenn at Peas and Crayons for the fun linkup every week.

(By the way, if you’ve never checked out her site, you MUST!  Her recipes are mouth-watering and her photos are fabulous.  And she’s funny too)!

I can’t start the day without my coffee.  It’s actually my favorite thing about waking up.

Despite the freezing temps, I wanted my kale shake for breakfast.

Snack time ….  Wasabi peas!!  These crunchy little nuggets of joy can be found at Trader Joe’s.  Love them!!

I knew exactly what to do with my left over salmon from yesterday.

Mixed greens, chopped yellow bell peppers, chopped onions, cherry tomatoes, shredded mozzarella cheese, a few jalapenos and sunflower seeds. YUM!!!

After work, we had a carrier rep treat us all to pedicures at the Nail Bar.   Aaaahhhhh….  just what I needed!

When I came home from the pedicure, Hubby had a homemade pizza in the oven!!  Isn’t he the best?!?

After I put the kids to bed, I had a sweet craving come over me.  On our new Wellness Challenge at work, points are deducted for sweets with more than 5 grams of sugar.  So…  I discovered that a 1/2 of one sheet of graham crackers plus a small smear of Biscoff = less than 5 grams of sugar!!

Satisfying!

Perfect.  It was just enough to satisfy my need for a dessert.

Last night we were catching up on the DVR.  We watched ‘American Horror Story: Asylum’.  That show is flippin’ CREEPY!!  I loved the first season with Connie Britton.  But this season… man, it’s Insane!!

Last Thing You Baked:

I cook a lot more than I bake.  I think the last thing I baked would have to be this super simple Pumpkin Cake.  2 ingredients:  1 box of spice cake mix and 1 can of pumpkin.  That’s it – bake at 350 for 30 minutes or so.  Could not be easier.

Last Thing You Instagrammed:

Well, the last thing I instagrammed was my coffee (above).  The one before that was my zucchini (above).  And the one before that was featured on the blog already in this post.  And I didn’t want to repeat a photo, so I had to go 4 back to get this little gem:

Clean the bathrooms.  It’s always last on the list because I always put it off.  I hate cleaning bathrooms …  especially with a 7-year old son!  YUK!!!

What I Ate Wednesday

First of all, how is it Wednesday already??  This week has flown by, and tomorrow is my Friday!!  Yipee.

It’s time for my favorite post of the week ….  What I Ate Wednesday …..  thank you Peas and Crayons for hosting a fun linkup every week.

My day actually started at 5 a.m, which was 30 minutes before my alarm was even scheduled to go off.  I’m not sure why I popped up so early. I had some strange dreams and I guess my body was just done sleeping.

After about 4 cups of coffee, I had the usual kale protein shake.  I know – I get a little boring.  I have it every day.  But it is so yummy.

I gave my daughter a few sips before I left for work.  She was eating her pancake on the couch while watching Curious George.

 

 

So I took my salad to a park around the corner, sat on a picnic bench and enjoyed the sunlight while I ate my salad.  Ahhh.  Perfect.

When I got back from lunch, I found these sitting on the counter – evil cookies from Panera.  A carrier rep had brought them in.

But guess what?!?  I completely resisted them!!  I didn’t have a single bite!!  Yay!

For dinner, we met my Mom, Aunt and cousin at Jason’s Deli to celebrate my birthday.  (It’s on Friday).  I absolutely love Jason’s Deli simply for their salad bar.  It’s awesome.

Tonight, though, I decided to get the Manager’s Special – a half sandwich and salad bar.  (My kids ate the chips for me).

There are just too many good sounding sandwiches to choose from.   I chose the Wild Salmon-wich.  “Marinated grilled wild Alaskan Sockeye salmon, guacamole, roma tomatoes, leafy lettuce, chipotle aioli on toasted herb focaccia.”  Sounds good, right?

It was just ok.   I think that salmon was the frozen variety.  I probably won’t order that again.

The neat thing is that we went on Wednesday night.  Kids eat FREE on Wednesday nights!!  Awesome.  Well, actually it’s a good thing.  I was very disappointed in the quality of the kids food, so I’m glad I didn’t have to pay for it.  My son’s pizza was crap.  And my daughter’s “organic” mac & cheese was straight out of a box.  The kind that uses yellow dye, too.  Not cool.

But the salad bar.  The salad bar is a different story.  All the veggies on the salad bar are organic.  There’s also a huge choice of pasta salad, couscous, hummus, etc etc.  So much great stuff to choose from.  Here’s what mine looked like.  Those little muffins are good, but I had to share with my kids.

Another main reason why I love Jason’s Deli — is the soft serve machine.  It’s FREE for everyone after your meal!  YUM!!!

After dinner, I headed over to a local children’s consignment sale, Duck Duck Goose.  Since I had consigned clothes, I had a Private pass to shop the sale one day early.  This sale is HUGE, and it only happens twice a year.  I got there at 7:45pm to start shopping.  I ran into a friend around 9:30, which was awesome because we could stand in the line together.  We ended up waiting in line for TWO HOURS to check out.  I didn’t get home til 12:30am.  Oh my goodness.  What a long day!
