What I Ate Wednesday – 10/10/12

The day started at 4:30am when my alarm went off.  I had to leave the house at 5:45am to be at a client’s office by 6:15am for employee meetings that started at 6:30am.  I am NOT a morning person.  You would think 75 minutes would be enough time to get ready while the chickens are still asleep.  But after hitting the snooze button a couple of times and taking a longer-than-normal shower in hopes that the water would wake me up (instead it put me to sleep), I was running a little behind.  So I quickly darted out the door with only my coffee in hand.  I did, however, manage to grab a banana and this protein shot, and shove them into my purse.

Unfortunately, though, I didn’t have time to eat them.  The meetings ran long and I had to quickly dash to another meeting right after this one.  I was almost too busy to think about food….  UNTIL …  my stomach started growling (very loudly) while I was conducting the 11am meeting.  I was afraid my stomach was louder than I was!

So embarassing!

As soon as the meetings were over, I quickly found the nearest Chick-Fil-A and ordered the Southwest Chargrilled Chicken Salad.  Ahh..  Finally.

I had a few minutes to catch up on things while I sat and ate.

So I notice other bloggers posting pictures of their wardrobes.  I’m not huge on fashion…  but I’m not a slob either.  I try to buy clothes I like without much regard for the current fashion trends.  If I like it, I wear it.

So this is my attempt at being fashionable.  Like the space boots?  lol

Anyways, by the time I got home, I was exhausted.  BUT, it was a gorgeous day so I still managed to get in a nice 45 minute walk in our hilly neighborhood, pushing my daughter in the stroller.  When I got home, I did a series of pushups and pullups (5 of each, for 5 rounds).

Dinner time.

I found this box of patties at Kroger.  They were on clearance and looked pretty good.  It even says right on the box ‘Better than your ordinary burger.’

It wasn’t.  It was weird.  It tasted like a breakfast sausage.  Don’t get me wrong – I love breakfast sausage.  But not on my burger.  So with the leftovers, we are going to chop them up and use them in a breakfast casserole tomorrow.

And finally, no hard day would be complete without a few bites of ice cream.  🙂  I also took a chance on this new product I found at Kroger.  Pumpkin Pie ice cream by Turkey Hill.  Oh my!  I am in LOVE with this new ice cream.  It doesn’t beat Blue Bell, but it comes VERY close!!  If you see this in your grocer’s freezer, I highly recommend you take a carton home with you!!

What I Ate Wednesday

Time for another installment of What I Ate Wednesday, courtesy of Peas and Crayons Blog.

 

As per usual, the day started off with a kale shake.  What was different about it today, though, was that it was hubby’s shake from yesterday that he didn’t finish.  It had been in the freezer for 24 hours.  We were all in a rush so there wasn’t time to make fresh shakes this morning.  So I had to eat it with a spoon…

Yeah, I know it doesn’t look that appetizing, but I promise the flavor is great.  Plus, it’s frozen so it’s like eating ice cream for breakfast!!So I’m sitting in my Wednesday morning meeting and 4 different coworkers give me a scowl face followed by “What are you eating?”  Another asked “Why is it brown?” and “What’s in there?”  I like telling people that I’m having a kale shake and watching the look on their face.

Ok, here is the part where my day EXPLODED!  I had several people coming at me all at once, needing their answer/spreadsheet/whatever immediately, or more like yesterday.  Well, I’m only one person and as much as I try to multi-task, when it comes down to it, I really can ony do one thing at a time.  And this week, a coworker is on vacation so I’ve been filling in for her.  Turns out I’ve spent the last 3 days working on her stuff while neglecting mine.  To the point that now I won’t be able to take that vacation day I had planned on Friday because I just don’t have everything done.  It sucks, I know.  But such is life.  Or rather, such is insurance.

So I said all that to say …  I didn’t have lunch today.  Didn’t hardly leave my desk, except for bathroom breaks.  The only food I had at my desk was a can of Blue Diamond Almonds, Wasabi flavor.  I realized around 3pm that I was STARVING.  I think I ate about 3 servings worth.  Oh well. Fast forward to dinner.  Boy was I glad to be home!!!I was in the mood to cook and create.  I had 2 cucumbers in the fridge, so I decided to make homemade pickles.

The pickle recipe is courtesy of Corinne.  You can find her recipe here. While I was in the kitchen making dinner, I went ahead and made a salad for tomorrow’s lunch.  I don’t want to be stuck at work with no lunch again.  This is the salad I wish I’d had today!  Mixed greens, turkey pepperoni, hard boiled egg, mushrooms, yellow peppers, grape tomatoes and sunflower seeds.  YUM.  That’s my kind of salad.  I’ll take a little homemade balsamic to go on top.

For dinner, I was in the mood for roasted veggies, but we didnt have any zucchini or squash so I settled for eggplant.

Served alongside some turkey bacon and leftover breakfast casserole, topped with salsa and a side of greens.

It was actually really good.  I love putting salsa on eggs.  Yummy.  The hubs put his breakfast casserole into a low-carb wrap with salsa, cheese and peppers.  He ate it before I had a chance to photograph it.I did, however, photograph this:

It’s now 9pm and I’m wishing I had something sweet to eat.  There’s not a thing in the house that has any trace of sugar.  Well, except for my son’s candy stash, which is leftover from last Halloween.  As you can imagine only the crappy stuff is left.In that case, it might be time for bed!  🙂

It’s Going To Be a Rough Day

It’s only 7am, so it seems a little early to predict how a day will go. But I just have that feeling.  Usually, I’m a positive person.  I try to look on the bright side, most of the time. But not today … today is different.

Why?  Well, for starters, I only got 2 hours of sleep.  I tossed and turned and stared at the ceiling til I finally went downstairs.  I’ve been struggling with something for a while now and it just got the best of me last night. I stayed up reading blogs and catching up on my DVR til around 3:30am when I finally convinced myself to go to bed.

So, two hours of sleep before the alarm woke me up. Yet amazingly, I still got up and walked my hilly neighborhood for 30 minutes. Usually I find it difficult to muster up the energy to workout in the morning even after a full nights sleep.  I guess I was hoping the endorphine release would improve my mood.  Sadly, it did not. Nor did it give me any sort of mental clarity.

Add to that the  fact that today is my Friday.  (Yes, I am well aware that today is Thursday, but the fact I’m off tomorrow makes it my Friday).  And I’m going to be on vacation all next week.  Well, not a real vacation.  I’ll just be at home cleaning out the basement.  Sounds like fun, right?  It also sounds like I may be doing some work from home next week. That does not sound like fun.  Especially if I can’t get a LOT knocked off my list today. Worst part is I’m at the mercy of others.  I can’t do these projects unless my clients send me their data in a timely fashion.  Oh the wonderful world of insurance.

So I don’t want to seem like Debbie Downer or Negative Nelly.  I’m just being realistic.  It’s going to be a rough day.
